Ligurian Focaccia, an Icon of Our Region

The Ligurian Focaccia is a typical specialty of our cuisine: its origin is really old and it is an emblem of our tradition and culture becoming a bakery product known all over the word (what someone may call “White Pizza”).

Known also as “Focaccia Genovese” (Focaccia from Genoa), “White Focaccia” or “Traditional Focaccia”, its name is from the Genoa dialect “Fugassa” which means “baked in the fire”.

The Ligurian Focaccia is a simple focaccia: it is born as breakfast food for the dockworkers (the “Camalli” of the Genoa Seaport). It is so “snacky” that it becomes a snack you can easily eat while walking around or even during work.

The salty Focaccia was (and still is) one of the first real street foods.

With time, the crunchy version of the Ligurian Focaccia has brought a proper typicality together with the fresh soft focaccia of bakeries.

The Focaccia from Genoa is an authentic excellence of the Ligurian tradition: our crunchy version is thought with the aim of making it loved even out of our region and the Italian borders.

The process to produce the dry focaccia has a strict processing and packaging protocol: the ingredients must be natural and healthy, it helps to keep the taste and the fragrance unspoiled from the moment it comes out the oven until it is on the table!

Our Ligurian Focaccia, in fact, follows the traditional recipe of the classic focaccia even if it is crunchy, thin and crisp: these characteristics permit us to export in the word this authentic deliciousness of Liguria.

The guarantee of an excellent quality has been since always a fundamental value of our company: therefore, even for the artisanal processing of our thin focaccia we do not use additives or artificial colouring but only high selected raw materials as per the best olive oil.

The recipe of our crunchy Ligurian Focaccia does not contain any animal fat. Except for the “cheese focaccia”, there are no ingredients of animal origin: this allows the consumption of our focaccia even to those who have chosen a vegan or vegetarian diet.

The shelf-life of our Ligurian Focaccia is guaranteed from the good production practice and packaging, also from the use of high-quality raw materials, accurately selected by our food technologists (as per the high oleic sunflower oil which is more resistant to the oxidation).

This peculiar attention in choosing the ingredients together with the stringent rules of the process allows us to give more product freshness and to preserve it even more from the oxidation and the typical fat rancidness until the final consumer.

The Ligurian Focaccia Is Always So Good!

Our Ligurian Focaccia is a perfect bread replacement: it can be eaten at lunch, dinner, between meals or during an aperitif with friends.

Never ever tried it at breakfast dipped in the cappuccino or latte as a real Genoa dockworker? A strange, but delicious combination… every Italian tries it at least once in life!
